Chocolate Chip Oatmeal Mini Cakes

  • 1 c. old-fashioned oats
  • 1 1/2 c. boiling water
  • 1 c. light brown sugar
  • 1 c. white sugar
  • 2 eggs
  • 1 t. baking soda
  • 1/2 t. salt
  • 1 1/2 c. flour
  • 2 T. cocoa powder
  • 1/2 c. oil
  • 1 12- ounce bag semi-sweet chocolate chips
  1. Preheat your oven to 350 degrees.
  2. Pour boiling water over oatmeal and allow it to set for 10 minutes.
  3. Mix sugars, eggs and oil together well, then add baking soda, flour, salt and cocoa powder, stirring well (mixture will be thick).
  4. Add oatmeal, stirring to combine, then stir in 1 c. chocolate chips.
  5. Pour the batter into greased and floured mini loaf pans, filling them about 2/3 full (you can also use a 9X13 pan). Sprinkle additional chocolate chips over the top of the batter, as desired.
  6. Bake the mini cakes for approximately 33-35 minutes. Let cool for 10 minutes before taking them out of the pan.
