Loaded Mashed Potato Soup

  • 4-6 baking potatoes I used Yukon Gold potatoes
  • 4 T. unsalted butter
  • 1/3 c. flour
  • 4 c. milk I used skim milk, but you could substitute low-fat or whole milk
  • 4 oz. cheddar cheese
  • 1/2 c. sour cream or half and half
  • 2 t. salt
  • Pepper to taste
  • Cooked and crumbled bacon
  • 2-3 green onions chopped fine
  1. Place your potatoes in the microwave for approximately 15 minutes, or until tender.
  2. Let them cool a bit, then peel and mash with a fork. If you are using a potato with a thin skin, you can leave the peels on.
  3. Meanwhile, melt the butter in a large saucepan. Add the flour and cook for 1-2 minutes, then pour in the milk while whisking. Let the sauce cook until thickened, about 5 minutes or so.
  4. When the sauce has thickened, add the mashed potatoes and cheese, as well as the salt and pepper. The potatoes will thicken up the soup quite a bit, so don't be afraid if it seems too watery at first.
  5. After the cheese has melted, add the bacon and green onions, along with the sour cream or half and half, stirring to incorporate.
  6. Ladle the soup into bowls and top with extra cheese, bacon, onion, sour cream, or all of the above!
