Menu Plans for Busy Moms

Happy Monday! I hope you are looking forward to starting off the week with a helpful menu plan 🙂

Weekly menu planning can help busy moms save time and money prepping meals for their families. The weekly Trim Healthy Mama menu is full of Trim Healthy Mama recipes to keep you on plan. Using healthy menu plans gives you options for breakfast, lunch and dinner that the whole family will love.

This week we have a break from the hectic schedule we’ve been running recently, with only piano lessons and cub scouts to deal with at dinner time.

This means I will have a bit more time to cook a healthy dinner each night, but I’m still going to break out my crock pot once to make a yummy beef stew that we haven’t had in a while.

Our weather has been so funny lately, alternating between very warm and cold…for example, it was 78 on Saturday, then 45 Sunday. I’ll have to make sure that I pick a cold evening on which to eat the stew!

We’re having our favorite Bacon Chicken Ranch Casserole again this week. My husband was out of town for work last week and was disappointed that I made this on a night when he wasn’t here. I’m making it again just for him 🙂

As usual, my menu plan is Trim Healthy Mama-friendly. If you aren’t familiar with Trim Healthy Mama, head over to read all about how I became a Trim Healthy Mama and lost 35 pounds in 7 months.

Here’s what’s on the menu this week:

Eggs, berries (S)
Baked Oatmeal, 1/2 banana (E)
Scrambled Eggs with cheese, bacon, berries (S)

Leftovers most days
Turkey or ham and cheese in low-carb wrap (S)

Kielbasa and Cabbage skillet, deviled eggs (S)
Bacon Ranch Chicken Casserole (S)
Taco Night (S)
Beef Stew in the slow cooker (S)
Homemade pizza with a sprouted wheat crust, salad (Crossover)
Ravioli and salad (A downright cheat meal…our daughter requested it for her birthday)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook and the Food for Life Cookbook (affiliate links). We’ve been using the THM cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

That’s crazy swings in temperatures. We did have a cool morning at just 38 degrees this week, very strange.

The beef stew sounds so good. I should make it one more time this spring before it gets to warm to want stew.

We’re having a very rainy day today…a perfect day for stew! Hope you get to make some before the weather turns too warm 🙂
