Happy Monday! Wow, can you believe it’s June already? It will be summertime before we know it!
We have one more week of absolute craziness until school is out and all the kids’ activities are done for the season.
This past weekend was packed full…a 5K, two football games, and working on putting out the mulch that was delivered (in a big pile in the middle of the driveway…we had to lay it out in the yard ASAP so that we could actually use the driveway again!).
This week, we have something school or sports related every day, which means that dinner needs to be quick and easy! Luckily, one of the nights we get to eat at the event, but I still have to bring some chips and veggies.
But the rest of the week, I’ve planned for meals on the grill (super easy clean-up!), or a one-pan meal or big salad to make dinner as easy as possible.

Bacon Ranch Chicken Casserole (S)
Eat at church
Trim Mac Salad (S)
Chicken Parmy, zucchini noodles (S)
Homemade pizza, salad (Crossover)
Eat Out (S)
I’ve taken most of my dinners from the Trim Healthy Mama Cookbook and the Food for Life Cookbook (affiliate links). We’ve been using the THM cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
