Menu Plans for Busy Moms

Happy Monday! Wow, can you believe it’s June already? It will be summertime before we know it!

We have one more week of absolute craziness until school is out and all the kids’ activities are done for the season.

This past weekend was packed full…a 5K, two football games, and working on putting out the mulch that was delivered (in a big pile in the middle of the driveway…we had to lay it out in the yard ASAP so that we could actually use the driveway again!).

This week, we have something school or sports related every day, which means that dinner needs to be quick and easy! Luckily, one of the nights we get to eat at the event, but I still have to bring some chips and bottled water.

As usual, my menu plan is Trim Healthy Mama-friendly. If you aren’t familiar with Trim Healthy Mama, head over to read all about how I became a Trim Healthy Mama and lost 35 pounds in 7 months.

Here’s what’s on the menu this week:

Breakfasts
Eggs, berries (S)
Sweatpants Oatmeal, 1/2 banana (E)
Sprouted wheat pancakes, bacon, strawberries (Crossover)
Scrambled Eggs with cheese, bacon, berries (S)

Lunches
Leftovers most days
Turkey or ham and cheese in low-carb wrap (S)

Dinners
Taco Night (S)
Swedish Meatballs, broccoli (S)
Trim Mac Salad (S)
Tuscan Cream Chicken, green fries (S)
Eat scout troop BBQ (I’ll make this on-plan by eating a burger without the bun and some coleslaw or salad) (S)
Eat Out 2 times (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook and the Food for Life Cookbook (affiliate links). We’ve been using the THM cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

    1. It was crazy and tiresome, and I’m glad it’s over. Thankfully we only have weeks like that once in a while ๐Ÿ™‚

Hope you have a great week!
