Happy Memorial Day! I hope you are enjoying the weekend with your family and have something yummy planned for your menu today ๐Ÿ™‚

Weekly menu planning can help busy moms save time and money prepping meals for their families. The weekly Trim Healthy Mama menu is full of Trim Healthy Mama recipes to keep you on plan. Using healthy menu plans gives you options for breakfast, lunch and dinner that the whole family will love.

I feel like today is the calm before the storm…the end-of-the-school-year storm of activities. To look at our calendar for the next two weeks fills me with some dread, because there is literally some activity or party to go to every day or night.

I think it’s even busier than usual because our daughter is in her last year of elementary school, and so there are many extra end-of-year celebrations…both at school and at church.

Which makes me appreciate menu plans so much! I’ve planned some slow cooker dinners and easy skillet meals to make this week while we’re running to and from picnics, recitals and parties.

Here’s what’s on the menu this week:

Breakfasts
Eggs, berries (S)
Oatmeal, 1/2 banana (E)
Sprouted wheat pancakes, bacon, strawberries (Crossover)
Scrambled Eggs with cheese, bacon, berries (S)

Lunches
Leftovers most days
Turkey or ham and cheese in low-carb wrap (S)

Dinners
Hamburgers on the grill, coleslaw (S)
Cilantro Lime Burst Chicken Thighs, cauliflower rice (S)
Crock Pot Lasagna, salad (S)
Zucchini Canoes, salad (S)
Taco Night (ground beef, cheese, lettuce, salsa, sour cream) (S)
Homemade pizza, salad (Crossover)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook and the Food for Life Cookbook (affiliate links). We’ve been using the THM cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
