Menu Plans for Busy Moms

Happy Monday! I hope your weekend was a good one 🙂 We’ll definitely have a good week without worrying about dinner because we have our menu plan!

We’re FINALLY having some nice spring weather after so many months of cold. It’s not quite warm enough to grill yet, so I’ll just plan for some good ol’ comfort food this week.

I’m looking forward to trying out a new recipe for pork tenderloin from Northern Nester. Because the creators of Trim Healthy Mama don’t eat pork or shellfish, there aren’t any recipes for them in the cookbooks. But they are two of my husband’s favorite things to eat!

Here’s what’s on the menu this week:

Eggs, berries (S)
Sweatpants Oatmeal, 1/2 banana (E)
Scrambled Eggs with cheese, bacon, berries (S)

Leftovers most days
Turkey or ham and cheese in low-carb wrap (S)

Oven Chicken Fajitas, salad (S)
Cheeseburger Soup, salad (S)
Pork Tenderloin with mushroom gravy, sweet potatoes (E)
Taco Night (S)
Spaghetti with Italian sausage (spiraled squash for me and hubby, pasta for the kids), broccoli (S)
Homemade pizza, salad (Crossover)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook and the Food for Life Cookbook (affiliate links). We’ve been using the THM cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

    Your menu looks yummy. I was hoping to grill tonight but it looks like it’ll be too soggy and cold. I need to put meatloaf on our meal plan soon, I found two meatloaves I had made for the freezer and promptly forgot about them. I don’t usually keep meatloaf stocked in my freezer meals so I’m sure that is why I forgot all about them.

    I hope you have a great week. Yeah for online grocery shopping. I’m hoping to try it out when they add it to our local store. I’ve been trying to grocery shop in the evenings so I don’t have to go out on Saturday too. It is less busy but hard to fit in each week.

      Online shopping is awesome! I usually grocery shop on Saturdays because my store has some great Saturday-only specials, but then the store gets so busy that it takes forever to get through the aisles and checkout. Luckily, I can still get the Saturday specials even when I order online 🙂

    I feel like we must have similar tastes. I’ve browsed through many meal plans in the past and now I’ve looked at 3 of yours and all of them sound great! Usually I end up not liking a couple meals and need to come up with substitutes 😉
