Happy Monday! I am so excited that soup weather has finally arrived this week, because I can’t wait to try out some more of the new soups in the Trim Healthy Table cookbook 🙂
I was able to make Cheeseburger Soup this weekend and it was a hit with the whole family…even my uber-picky little guy, who ate a whole bowl. That’s huge! And I love that he didn’t even know that he was eating big servings of veggies hidden in among the hamburger and cheese 🙂
Today I’m doing a lentil soup in my slow cooker, and we’re trying Lemon Cream Chicken later in the week. I’m also mixing in some old family favorites like Breakfast for Dinner and our trusty BBQ Meatballs, now that it’s cool enough to use the oven.

Lemon Cream Chicken, cauli rice (S)
Ranch Hand Taco Salad (E)
BBQ Meatballs (adjusted to make them THM-friendly), green beans (S)
Easy Pizza Casserole, salad (S)
Pancakes, bacon, berries (S)
