Menu Plan Monday, January 30

It’s Monday again, which means it’s time to plan for another week of cooking!  I had a hard time thinking of meals this week, so I enlisted my hubby’s help.   He suggested a hamburger recipe that he saw in Men’s Fitness magazine, which uses 2 burgers in place of the bun…not sure how that will help with my calorie intake, but we’ll give it a try anyway 😉

I gave up on my “cook dinner every night” aspiration this week, as we had a couple of parties to attend this weekend, so we did eat out on Saturday and Sunday.  I am going to have to pick up the pace this week and plan some meals that I can add to the freezer for days such as these!  It will be just the kids and me for 5 nights this week, so some of the meals are super simple 🙂

Here’s the plan for this week:

  • Eat out Saturday and Sunday
  • Mac and Cheese, steamed veggies
  • Burgers, oven fries
  • Leftovers
  • Roasted chicken breasts, mashed potatoes, steamed veggies
  • French Toast, fruit

    Some of my favorite freezer meals are very easy. I make chicken in my crockpot. What I do is take my chicken pieces place them in my freezer bag and the add some marinade (BBQ, dressing, or just rub the chicken with a spice rub) then I freeze them. When I am ready to cook them I just thaw enough to get them out of the bag and then dump it into the crockpot and put on low until dinner. You can add veggies and or potatoes to make it a full meal. If you don’t have a crockpot then just thaw and place in a baking dish and bake about 1 hour on 350 degrees until done.

  2. Love the easy menu! We had chicken tacos today with mexican rice. I made the tacos while hubby made the rice. I love it when I don’t have to cook dinner myself. A little extra help goes a long way, especially when there are seven of us. 🙂
