In an effort to make me more accountable for making dinner every night, I’ve decided to start posting my menu each week on Mondays 🙂
I usually try to plan on one Mexican and one Italian-style meal each week, and fill in the rest of the nights with some other family favorites. Friday night is usually reserved for breakfast…sometimes we don’t have a lot of time on weekend mornings to do a big breakfast with eggs and the like, so I started doing it at dinner. That way I am able to eat my favorite breakfast foods at least once a week, and it’s usually a snap to prepare (as in I don’t have to keep referring to the recipe over and over).
I already had a lot of meat in the freezer, so I was able to use most of that in my meal plan….except for the fish, which was on sale this week at my local Harris Teeter.
- Steaks, baked sweet potatoes, salad
- Mac and Cheesedog Casserole, broccoli
- Mediterranean Tilapia, couscous, frozen veggies
- Lasagna with cream cheese, salad
- Skillet chicken and rice, frozen veggies
- Pancakes and bacon
