Good morning! It’s Monday again…how did that happen so quickly? I hope you all had a wonderful weekend!
We had a great weekend catching up with our Daddy who had been on a business trip for the past two weeks. After slogging through Washington D.C.’s Friday rush hour traffic (the worst of the week!), we finally made it to the airport to pick him up and take him to dinner. After so many days of eating out, what he really wanted was a homemade meal, but we thought it would be a good idea to kill some time at a restaurant in order to let the traffic clear a bit…and it worked!
So all this week, I’m making some of my husband’s favorites for dinner! We’re starting off with a bit of a heat wave early in the week, but it will cool off quite a bit in the later part of the week so that I can use my oven to make him some delicious BBQ meatballs!
Here’s what we’re having this week:
Monday: Roasted Chicken in the Crock Pot, rice pilaf, veggies
Tuesday: Skillet Chili Mac, corn
Wednesday: Spaghetti with Italian Sausage, salad
Thursday: Eat Out
Friday: Breakfast for dinner–eggs, linguica, biscuits, fruit
Saturday: Pan Fried Pork Chops, mashed potatoes, zucchini
Sunday: BBQ Meatballs, rice, veggies

I am trying to clean some stuff out of my freezer this week before we get some beef! Love your food choices this week.
Are you buying part of a cow? It sounds like you might be…having to make room for a lot of beef. I’ve always wanted to try that, but it seems a little overwhelming 🙂

Okay…I totally thought it could be a form of pasta. Now I know it’s sausage. LOL 🙂
LOL! Yes, linguica is a sausage that I grew up eating often. It’s popular in central California, where I’m from originally. I can’t get it here in Maryland, but my dad always brings me a big package of it when he visits. We keep it in the freezer and eat it sparingly…this week we’re eating our last package! Hopefully Grandpa will visit for Christmas and he can bring us some more 🙂

Your menu looks great. I don’t blame your husband for not wanting to eat out after being away for so long. Home cooking is always so much better. We love bbq meatballs too they are so good. 🙂
