We made it through our first week of summer vacation! It was a fun week, full of swimming, books, movies and relaxation 🙂
After several very hot days, it cooled off enough over the weekend that I felt it was fine to go ahead and plan a few meals that use the oven. I’m even going to give tuna casserole another try…the last time I made it, my kids were not big fans, but I saw somewhere that another mom used goldfish crackers on top of her tuna casserole instead of regular bread crumbs, and I thought to myself that it might just be a hit with my kids.
Here’s what’s on our menu this week:
Monday: Mac and Cheesedog Casserole, salad
Tuesday: Turkey Meatloaf, mashed potatoes, veggies
Wednesday: Brown Bag Burritos, corn
Thursday: Skillet Tuna Noodle Casserole, broccoli
Friday: Breakfast for dinner–eggs, sausage, toast, fruit
Saturday: Eat Out
Sunday: Chicken and Broccoli Stir Fry, rice

We will be having simple dinners this week. I’m trying to keep from using the oven this week since it’s going to be another warm one here. hope you have a great week!

I’m trying to stay away from the oven this week, too. I usually use Ritz crackers on Tuna Casserole, but Goldfish – that’s just brilliant!
I know, right!?! It’s so clever…and since my son adores Goldfish, I’m hoping he’ll eat it all up!

My mom used to make a tuna and noodle dish when I was a kid, and I loved it. I think it was an easy meal for her to whip up for us six kids. 🙂

It’s such a nice, comforting dish, isn’t it? I don’t know why my kids don’t want to eat it…I’m hoping now that they’re older they will like it better (and the goldfish too!) 🙂
