Menu Plan Monday

We made it through our first week of summer vacation! It was a fun week, full of swimming, books, movies and relaxation ๐Ÿ™‚

MENU PLAN

After several very hot days, it cooled off enough over the weekend that I felt it was fine to go ahead and plan a few meals that use the oven. I’m even going to give tuna casserole another try…the last time I made it, my kids were not big fans, but I saw somewhere that another mom used goldfish crackers on top of her tuna casserole instead of regular bread crumbs, and I thought to myself that it might just be a hit with my kids.

Here’s what’s on our menu this week:

Monday: Mac and Cheesedog Casserole, salad

Tuesday: Turkey Meatloaf, mashed potatoes, veggies

Wednesday: Brown Bag Burritos, corn

Thursday: Skillet Tuna Noodle Casserole, broccoli

Friday: Breakfast for dinner–eggs, sausage, toast, fruit

Saturday: Eat Out

Sunday: Chicken and Broccoli Stir Fry, rice

  3. I’m trying to stay away from the oven this week, too. I usually use Ritz crackers on Tuna Casserole, but Goldfish – that’s just brilliant!

    1. I know, right!?! It’s so clever…and since my son adores Goldfish, I’m hoping he’ll eat it all up!

    1. It’s such a nice, comforting dish, isn’t it? I don’t know why my kids don’t want to eat it…I’m hoping now that they’re older they will like it better (and the goldfish too!) ๐Ÿ™‚
