Menu Plan Monday

Today is our first official day of summer…the kids had their last day of school this past Friday and are officially off from school until late August.

We’re going to have lots of fun at the pool for swim lessons, working on our summer reading club, and seeing dollar movies. They are even going to have one worksheet a day from their Summer Bridge books (affiliate link), just to keep their math and reading skills up over the next few months.


We’re also planning some tasty summer dinners, which are not going to need an oven to prepare, as we are facing a heat wave this week, and don’t want to heat up the whole kitchen!

I improvised a BBQ Chicken Pizza on Sunday night, using the leftover roasted chicken from last week’s menu, and it was pretty tasty. Even my husband raved about it, which he doesn’t do too often! I think I may try to re-create it for lunch this week so that I can shoot some pictures of it for a blog post, then you can make it too 🙂

Here’s what’s on the menu at our house this week:

Monday: Spaghetti with Italian sausage, veggies

Tuesday: Chicken and Broccoli stir-fry, rice

Wednesday: Make your own tacos (taco meat, chips, lettuce, tomatoes, cheese, sour cream, salsa, etc.)

Thursday: Eat Out

Friday: Breakfast for dinner: eggs, linguica, toast, fruit

Satuday: Hamburgers on the grill, watermelon

Sunday: BBQ Chicken Pizza, salad

      The lessons are going well so far, except that my little guy was a bit scared this morning after a brief moment when he couldn’t reach the side of the pool and started to go under. It’s the reason I want him to learn to swim 🙂

    Sounds like you have lots of fun things to do this summer. Your menu looks great. I don’t know if I could get my family to eat BBQ chicken pizza. They are super funny about what goes on their pizza.They all dip their pizza in ketchup and want only certain toppings. But maybe I could persuade them to give BBQ chicken pizza a try. 🙂

      My husband loves BBQ sauce, so I wasn’t surprised that he liked it. Maybe you could just give it a try and see how it goes 🙂
