Happy Monday! How was your weekend? We had a great weekend…celebrating our daughter’s first piano recital, at a baby shower to help our friends prepare to bring home their new adopted daughter, and doing all the regular errands like grocery shopping and haircuts 🙂 It was a full weekend!
This week is our kids’ last week of school. I know for some of you that might seem really late in the year, but we had quite a lot of snow days during January and February, so we get to make those up at the end of the year. Luckily, all of the end-of-the-year stuff is all done now, so we just get to relax and enjoy this last easy week.
I only have one evening meeting this week for church, so I get to spend a little more time in the kitchen to make some meals that we haven’t had time for in past weeks. Here’s what’s on the menu this week:
Monday: Turkey Enchiladas, Spanish rice, veggies
Tuesday: Ravioli, salad
Wednesday: Roasted Chicken Breasts, couscous with tomato, scallions and lemon, veggies
Thursday: Chicken and Broccoli Stir Fry, rice
Friday: Breakfast for dinner–muffins, eggs, fruit
Saturday: Eat at baby shower
Sunday: Hamburgers on the grill, corn on the cob
