Menu Plan Monday

Good morning! How was your weekend? Can you believe it’s time for Monday again so soon?


This week is going to be a busy one, with meetings, recitals and kindergarten graduation (I’m super sad about that last one!), so I’m making a few fast and easy meals, since we won’t have a lot of time for dinner those nights. I also planned to make a very kid-friendly meal one night after reading an article that said that everybody should have their favorite meal once in a while…we’ll see if it helps the picky eater in my house 🙂

Here’s what’s on the menu at our house:

Monday: Stovetop Chicken Fajitas, salad

Tuesday: Spaghetti and Meatballs, broccoli

Wednesday: Crockpot Pulled Pork, homemade coleslaw

Thursday: Oven Baked Chicken Fingers, oven fries, fruit

Friday: Breakfast for dinner–Buttermilk Pancakes, fruit

Saturday: Eat Out

Sunday: Grilled Pork Chops, cheesy orzo, green beans

    I haven’t made pulled pork in a long time. We love it but, I haven’t found a good deal on pork shoulder roast lately. Maybe I will soon. I hope you enjoy the coleslaw recipe.

      I found this recipe on Pinterest that uses country-style ribs instead of a roast. I hope it works out just as well..I’ll let you know. The ribs were cheaper than the roast at my store.

    Breakfast for dinner is one of my go-to simple and quick meal options. Hope you enjoy the Kindergarten graduation (don’t forget your tissues!) as well as the rest of your week.
