Happy Monday! I hope you all had a very happy Mother’s Day 🙂 My kids made me some beautiful cards and took me out for lunch, then I got some time to read in the afternoon…talk about a perfect day!
This week is a special week in our family, as my husband is finally graduating from college after years and years of taking classes at night, on the weekends, and during the summers, while being deployed to the Middle East several times and keeping up with a full-time job and young family.
We are extremely proud of him and can’t wait to see him receive that degree that he’s worked so hard for! So this week, while we prepare for some out-of-town family to arrive, I’m making some easy family favorites for dinners…things that I can make with my eyes closed, since I’ll be busy cleaning and getting everything ready for guests.
Here’s what’s on the menu this week:
Monday: Broccoli Sausage Pasta skillet meal, veggies
Tuesday: Taco Chicken Bowls, veggies
Wednesday: Lasagna Casserole, veggies
Thursday: Baked Potato Bar–potatoes, broccoli, cheese, sour cream, crumbled bacon
Friday: Breakfast–eggs, biscuits, fruit
Saturday: Eat Out
Sunday: Hamburgers, potato salad, chips
