Happy Monday! How was your weekend? We took care of a lot of maintenance things on the outside of our house…cleaning the entire deck, washing the front of the house, pulling weeds, mowing the lawn and planting flowers. Now our house is all ready for the summer…and we worked up an appetite!
This week, we only have something to do one night…piano lessons…and so I can take a little extra time in the kitchen most nights. I’m making some enchiladas in honor of Cinco de Mayo tomorrow, and a favorite skillet meal on Wednesday that the whole family loves (and is super easy with only one pan to wash!).
Here’s our menu for the week:
Monday: Spaghetti and Meatballs, veggies
Tueday: Enchiladas, salad
Wednesday: Broccoli Sausage Pasta skillet meal, extra veggies
Thursday: Pan-fried pork chops, mashed potatoes, veggies
Friday: Breakfast for dinner–French toast, bacon, fruit
Saturday: Eat Out
Sunday: Hamburgers in gravy, mashed potatoes, green beans
I’m also planning to make some Chocolate Chip Oatmeal Cake for dessert this week…when I bake it in a 9X13 pan, it lasts us the entire week (and no, we don’t ever get sick of eating it!) 🙂

Do you have a recipe for the skillet meal? I’m a huge fan of one pot dishes and it sounds like something my family would love to try.
Hey Allison! I haven’t put that particular recipe on the blog yet….mainly because I always forget to take a picture until after my family has eaten most of it! LOL! I will try my best to get a photo this week so that I can share it with you 🙂
I’m making chocolate chip cookies this week, but chocolate chip oatmeal cake sounds good too. 🙂

Your menu sounds good, Erin. We are having enchilada shells this week and glazed pork chops too. I make hamburgers in BBQ sauce in the crock pot and they are so good. I’m sure making them in gravy would be delicious too. Hope you have a great week!
Hamburgers in gravy is something my grandmother would make for us once in a while when I was growing up. I don’t know if I would call it a recipe, more of a method, and I’m sure it’s not all that healthy, but they sure are good!
