Menu Plan Monday

I think I said this last week, but I really mean it this time…boy, is it cold!

It’s currently about 7 degrees, but with the wind chill factored in, it really feels like -8 degrees. Our heat pump is having trouble maintaining 63 degrees in the house, so I’m all bundled up trying to stay warm. So we need some warm food this week!

Menu Plan Monday

The chili I made for dinner last night really hit the spot, and sitting by a nice warm fire afterwards made for a nice, cozy evening! Here’s what else is on our menu for the week:

Monday: Roasted Chicken Breasts, stuffing, green beans

Tuesday: Pancake Supper at church

Wednesday: Baked Potato Bar, salad

Thursday: Spaghetti with Italian Sausage, salad

Friday: Breakfast for dinner – eggs, hash browns, fruit

Saturday: Eat Out

Sunday: Turkey Corn Chili (I used ground beef in place of the turkey), cornbread

    Oh I’m so sorry to hear you are still dealing with awful winter weather. Hopefully spring will arrive soon at your house.

    Spring seems to have arrived early here this year. Last year we were dealing with freezing temperatures and ice storms like you are and now a year later (the same week) it’s spring like weather. Maybe this means next year will be a mild winter for you. 🙂

    Your menu looks like a perfect one for cold weather though. This week we are having some of my family’s favorite dishes this week, like pizza and pan fried pork chops to name a few.

      Oh, I’m so glad that you are able to enjoy some nice weather! I just heard that we are supposed to get between 4 and 8 inches of snow this evening, so our winter will last a bit longer. At least with the snow, the kids can go outside to play in it…when it’s just icy outside, we can’t play and are just stuck inside all day.

      Pork chops sound so good right now…I haven’t been able to find any on sale for a while, so we’ve been having mainly chicken and ground beef meals. Hopefully pork will be on sale again soon 🙂

        Another 4-8 inches is a bunch of snow. My kids would love it is it snowed here. But I’m thinking our winter is done for this year. At least I hope it’s done since we have so many of our plants in the garden coming to life.

        I so know what you mean by pork chops being expensive. I usually buy a pork loin at Costco and cut it up into two roasts and a bunch of pork chops. But recently I couldn’t find one at Costco. I was getting worried they quit carrying them, but then the last trip there, I found one. You might check Costco and see if they carry the pork loins. At our Costco they run about $2.50/lb so not too bad at all.

    Your menu looks good, Erin! The spaghetti with italian sausage reminds me of the way my mom used to make spaghetti for us when we were kids. There were six of us kids and my mom worked long hours outside the house, so we had that meal often. 🙂
