Hello friends! How was your Christmas holidays? I hope you had a wonderful time!
I’ve been battling some yucky cold germs for the past couple of weeks, so I haven’t made a menu in a while…we’ve been eating leftovers and some take-out, although I did make a nice ham and all the fixings for Christmas.
This week, I’ve got a menu all prepared, and it includes a lot of ham! I don’t want any of that Christmas ham to go to waste, so I’m putting it in several dishes this week. For New Year’s, we are having Cioppino, a fish stew that is a traditional New Year’s meal in my childhood family.
Monday: Homemade macaroni and cheese with ham and peas, salad
Tuesday: Taco Night–ground beef, cheese, tomatoes, lettuce, sour cream, salsa, tortillas and chips
Wednesday: BBQ Meatballs, rice, veggies
Thursday: Cioppino, crusty bread
Friday: Breakfast–eggs and ham scramble, toast, fruit
Saturday: Split Pea and Ham soup in the crockpot, crusty bread
Sunday: Eat Out
