Menu Plan Monday

Hello friends! How was your Christmas holidays? I hope you had a wonderful time!

I’ve been battling some yucky cold germs for the past couple of weeks, so I haven’t made a menu in a while…we’ve been eating leftovers and some take-out, although I did make a nice ham and all the fixings for Christmas.

This week, I’ve got a menu all prepared, and it includes a lot of ham! I don’t want any of that Christmas ham to go to waste, so I’m putting it in several dishes this week. For New Year’s, we are having Cioppino, a fish stew that is a traditional New Year’s meal in my childhood family.

Monday: Homemade macaroni and cheese with ham and peas, salad

Tuesday: Taco Night–ground beef, cheese, tomatoes, lettuce, sour cream, salsa, tortillas and chips

Wednesday: BBQ Meatballs, rice, veggies

Thursday: Cioppino, crusty bread

Friday: Breakfast–eggs and ham scramble, toast, fruit

Saturday: Split Pea and Ham soup in the crockpot, crusty bread

Sunday: Eat Out

    We’ve been sick here and have lots of leftover ham too. I made bone broth from the ham bone and froze it along with some of the ham for homemade noodles and split pea soup. My husband just loves split pea soup.

    I hope you are fully recovered soon and that the rest of your family can stay well.

      My husband loves split pea too, in fact, he was the one who requested it this week. The kids aren’t so fond of it, but hopefully they’ll learn to like it 🙂

      Thanks Sandra! I bought the smallest ham I could find, but we still had so many leftovers. They tasted really good last night in the macaroni and cheese though 😉

    Hope you feel better soon! There is a pretty bad bug going around down here too but so far, Hubby and I have avoided it … the kids and boyfriend/girlfriends have had it so I’m really keeping my fingers crossed! I’m with Sandra … ham does disappear fast in my house too! We will have ours on New Years Eve for the get together with friends!
