Hello and Happy Monday to you! I hope you had a great weekend…we were a bit cold here in Maryland, but it’s supposed to warm up a tad over the next few days (after another cold spell). All this cold can’t be a good sign of what’s to come this winter…
To stave off the cold, I’ve planned a dinner menu that’s full of warm and comforting dishes. I’m also trying out a couple of new-to-me recipes, but they look so tasty and easy-to-prepare that I don’t think I can go wrong.
Here’s what’s for dinner this week:
Monday: Kielbasa Pasta Skillet with Spinach, green beans
Tuesday: Garlic and Herb chicken thighs, mashed potatoes, baked winter squash
Wednesday: Shrimp Fried Rice, Baked Crab Rangoons
Thursday: Spaghetti and Meatballs, broccoli
Friday: Breakfast–eggs, linguica, biscuits, fruit
Saturday: Shepherd’s Pie, green beans
Sunday: Homemade Pizza, salad

We’ve been having cold and windy weather here. Hopefully it will moderate later this week. The cold weather has been making me crave comfort foods. This week we will be having soup a few times and pizza like you are too. I hope your family enjoys the garlic and herb chicken thighs. Have a great week and keep warm.
I have been craving crockpot meals these days – we are expecting 10 inches of snow by tomorrow. Ick.

Your menu sounds good, Erin! I’m surprised that we’ve only gotten a tiny bit of snow so far here in Illinois, but it supposed to get extremely cold tomorrow!
