So…last week was absolutely crazy for us with all the lessons and practices that have started, plus then our sweet little kitty was sick and I spent a considerable amount of time cleaning up after and taking care of him, meaning that dinner prep went out the window those nights, despite my plan for quick meals.
You’ll see a few repeats on the menu this week, since a few of the meals didn’t get eaten last week. Here’s what we’re eating for dinner:
Monday: Mac and Cheese with Kale
Tuesday: Crockpot Lasagna, salad
Wednesday: Teriyaki Meatballs, rice and veggies
Thursday: Chicken Enchilada Casserole, squash
Friday: Breakfast for dinner–sausage, eggs, biscuits and fruit
Saturday: Eat Out
Sunday: Eat Out
