Good morning! Time to start another week…the last one of the summer. Wow, did time ever fly this year!
I took last week off from menu planning and sort of guessed at dinner each night using what I had in the pantry and freezer. I was glad to use up some of what we already had on hand, but not having a good plan in place each night did make things a bit harder.
That’s why I’m so happy to have a good plan this week!
My local grocery store had ground turkey and lean ground beef on sale this week, so I planned my menu around them, along with the fresh fruits and veggies we receive weekly in our CSA.
Here’s what’s for dinner at our place this week:
Monday: Spaghetti with kale and Italian Sausage, cucumber salad
Tuesday: Eat Out
Wednesday: Chicken Cutlets, cheesy orzo, veggies
Thursday: Chili Mac, veggies
Friday: Breakfast–French Toast and peaches
Saturday: BBQ Meatballs, rice, cucumber salad
Sunday: Turkey Enchiladas, corn and tomato salad

We have been enjoying cucumber salad often recently, with all the cucumbers we have been harvesting from the garden.
