Menu Plan Monday

Good morning! I hope you all had a wonderful weekend 🙂

I didn’t do so well at sticking to my menu plan last week…we ate out a couple of times…so I’ve got a few repeats from last week’s menu for this week.

Menu Plan Monday

We’re so excited to eat some super yummy corn from our CSA with tonight’s dinner, plus, I’m making my roasted veggie recipe this week too:

Monday: Burgers on the grill, corn-on-the cob, fruit

Tuesday: Swedish meatballs, mashed potatoes, kale

Wednesday: Spaghetti with Italian sausage, roasted summer vegetables

Thursday: Taco Night–seasoned ground beef, refried beans, cheese, lettuce, salsa, sour cream, tortillas and chips, fruit

Friday: Breakfast–waffles, bacon and fruit

Saturday: Chicken and Broccoli stir-fry, rice

Sunday: Eat Out

    We had tacos last week and fajitas are on the menu for this week. We love Mexican food at our house.

    This week promises to be a hot one so I’m making easy to make meals that don’t involve the oven, to keep the house cool. Hope you have a great week, Erin!

      I love Mexican food too (I think it’s because I’m from California), but my family can take it or leave it. They’re weird 😉

      Hope you can stay cool this week! We are having unseasonably cool weather this week, which I’m loving…windows are open and air conditioning is off!

      Yeah, repeats are good…it makes menu planning easier, for one thing! Lol! The burgers sounds yummy…I hope you enjoy them 🙂

    I love hearing about the fruits and veggies that you’re getting from your CSA. You seem to be getting things quite different from us, but I guess that’s because we live in IL. 😉 We ended up with some vegetables last week that I’d never seen in my life. Yes, I could have googled what they were, but in the end, I decided to just juice them and that turned out well.

    We love having breakfast for dinner, too! We probably do it on a weekly basis…sometimes, twice a week.

      I’d love to hear what kinds of veggies you are getting in IL…getting all these new (to me) varieties is sort of exciting, but I wonder how they decide to plant. There weren’t a whole lot of recipes out there for kohlrabi!
