Good morning….happy Monday! Hope you had a great weekend 🙂
This week is going to be even more super crazy than usual. We are starting a week of vacation Bible school at our church today…the kids are attending and I’m one of the group leaders…and even though it’s a whole lot of fun, it is also exhausting! (I don’t know how all of you teachers out there do it on a daily basis!) So with that mixed in with piano lessons, doctor appointments and all the other stuff we do to keep our household running, I’m sure I will be one tired mommy come Friday.
That’s why I’m keeping the menu pretty simple for dinner this week. I”m also trying to use up our CSA veggies, so we are also trying out a couple of new things:
Monday: Borscht with sandwiches
Tuesday: Spaghetti with Italian sausage, roasted eggplant and zucchini
Wednesday: Burgers on the grill, oven fries, fruit
Thursday: Oven Chimichangas, Spanish rice, veggies
Friday: Egg and ham scramble (or quiche if the CSA gives us spinach), toast, fruit
Saturday: Eat Out
Sunday: Steak on the grill, tomato and cucumber salad

I hope your week goes well, it sure does sound like a busy one.
Our menu will be oven free again this week since the weather will be warm. We will be grilling pizza late this week, we all love pizza and grilling it just makes it even more special.
Ooh, grilled pizza sounds good! I’ve never tried that before…do you have a post about it on your blog that we can check out?

I don’t yet. I’m hoping to get some photos if I get my painting done and clear all the door and drawer fronts from out in our gazebo. So I might have one up soon. If the week goes as planned.
I like your simple menu. Hope your week goes well! I’d really like to try a CSA box sometime. I wonder if it is too late in the season…I may have to look into that idea.

If your local CSAs have room, I’m sure they’d love to have another member…why not call around and see if you can get in? Since we joined part way into the season, we got a pro-rated price, which was nice.
That cucumber and tomato salad sounds delicious! I need to make some zucchini bread this week, and I’m making potato soup tomorrow. 🙂

I was surprised at how good the cucumber and tomato salad was…it is super simple, but very tasty. I should post about it soon 🙂
