Happy Monday friends! Did you have a good 4th of July? We had the most perfect weather…I still can’t believe that it was so nice!
Unfortunately, this week is supposed to be a hot one, so I’m going to try to use my slow cooker and stove top instead of the oven to avoid heating up the kitchen even more than usual.
I”m also trying out a new-to-me recipe for fried rice that I hope will become a family favorite, since we all love Chinese food, but dislike the high amounts of salt and oil that come in the take-out from our local restaurant.
Here’s what’s on the menu this week:
Monday: Slow Cooker Pork Roast, mashed potatoes, broccoli
Tuesday: BBQ Meatballs, rice, veggies
Wednesday: Slow Cooker Beef and Bean Enchiladas, salad
Thursday: Chicken Fried Rice, lo mein
Friday: Breakfast for dinner–waffles, linguica and fruit
Saturday: Eat Out
Sunday: Spaghetti with Italian sausage, veggies

We are doing an oven free menu this week too. I hope you and your family like the slow cooker enchiladas.
I love fried rice, too! I think I should try to find a good oil-free recipe and make some soon. 🙂 Lately, we’ve been using vegetable broth in place of oil with good results.
