Good morning mommies! I hope you had a wonderful summer weekend!
Well, it’s been a couple of weeks since my last Menu post…I was super sick a little over a week ago and it was all I could do to get out of bed for some ibuprofen, let alone post anything. I just sort of haphazardly put together dinner each night after I felt better…luckily I had some stuff in the pantry and freezer so we didn’t starve, although my husband did take the kids out to eat on my worst sick day 🙁
Happily, I’m feeling back to my old self now, and I’ve got a menu all worked out for the week. One of my neighbors is on vacation right now and she offered me her CSA share for the week, so I’m experimenting with some new-to-me veggies. Look for a post soon on my CSA experience.
Here’s what we’re eating this week:
Monday: Swedish Meatballs, egg noodles, braised beets
Tuesday: Eat Out
Wednesday: Taco Night- seasoned ground beef, cheese, lettuce, tortillas, salsa, sour cream, veggies
Thursday: Breakfast for dinner- eggs, bacon, homemade biscuits, fruit
Friday: Hamburgers on the grill, corn-on-the-cob, chips, homemade ice cream
Saturday: Italian Mac and Cheese, sauteed spinach
Sunday: Potluck at church (we brought some of the Italian Mac and Cheese and zucchini bread)
