Menu Plan Monday

Menu Plan Monday

Good morning everyone! I hope you all had a great weekend 🙂

We got more snow yesterday…on March 30th!!…so I’m trying to stay upbeat and think warm thoughts. Today is supposed to be 63 degrees here in Maryland, but they didn’t say anything about snow yesterday, so I’m a little doubtful.

I was able to stock up on some ground beef, Italian sausage and pork sirloin roasts at the grocery store this weekend…awesome prices, combined with Super Double coupons, made for amazing deals. So you’ll be seeing some meals made from those ingredients this week and next.

In case you missed it, be sure to check out my post from the weekend about the 30-Day Salad Swap…makes for an easy and healthy dinner!

Some of my favorite things to make for dinners are quick and easy skillet meals or one-pot meals, and I was thinking about doing a short series of them here on My Mommy World…anyone interested?

Here’s what’s on our menu for this week:

Monday: Make-your-own tacos, salad

Tuesday: Spaghetti with Italian sausage, veggies

Wednesday: Roasted Pork Sirloin, mashed potatoes, veggies

Thursday: Chili Mac, corn

Friday: Breakfast for dinner

Saturday: Chicken Scaloppine, noodles, broccoli

Sunday: Eggs, French Toast, cantaloupe

More snow?! Your winter is really hanging on, isn’t it. I hope you will get some spring like weather soon.

Your menu plan looks good. I’m going to be making a pork roast this week too.

Oh, it sure is, Shelly! It is a bit warmer today, so I’ll take that as answer to prayer for Spring 🙂

Hope you have a wonderful week!

I would love that series and make it all! I’d also love to know how you do your roasted pork loin…mm! I’m in a pork slump. LOL

Yea! Thanks for the encouragement Danielle…I hope you’ll like the series 🙂 Still working on it, but hope to have it done soon!

As for the pork…oh dear, I’m afraid to admit it, but I’m using a pre-marinated pork roast. So easy…you just take it out of the wrapper, put it in a roasting pan and throw it into the oven.

Wow, I am sorry you are still getting snow. Hopefully, that was the end of it. It rained here last week and it was such a refreshing change. I had forgotten how much I like rain. Breakfast for dinner is my backup plan for the week.

Thanks, Jean! The sun finally came out yesterday and there is a hint of spring in the air…I even spied a few green things starting to pop up in the yard.

I hope you have a wonderful week!
