Menu Plan Monday


Happy Monday…and Happy St. Patrick’s Day! We woke up to about 7 inches of snow in our yard…4 days before Spring…and since we can’t get to the grocery store until the snow plow comes through, I’ll have to make a traditional Irish dinner over the weekend.

I recently subscribed to my favorite Cook’s Country magazine a few weeks ago, and my first issue came on Saturday.  There are so many good recipes in it this month!  I’m trying out a casserole on Thursday and I’ll let you know how it turns out.

Here’s what’s on the menu at our house this week:

Monday: BBQ Meatballs, rice, veggies

Tuesday: Ribs in the crock pot, mashed potatoes, veggies

Wednesday: Breakfast for dinner

Thursday: Southwest Layered Beef Casserole, salad

Friday: London Broil on the grill, baked potatoes, salad

Saturday: Chicken and Dumplings, homemade bread

Sunday: Eat Out

    Wow that’s a lot of snow. I’m so glad we are past all of our snow now. I hope the plow comes by soon so you can get out. Your menu looks yummy. Happy St. Patrick’s Day!

    LOL on the snow! That is pretty much how it’s been around here lately too. Thankfully it is starting to melt for us now. Your menu sounds really good, especially the chicken and dumplings!
