Menu Plan Monday

It’s finally (almost) here! One of my favorite times of year…thanksgiving! I’m so excited to have my kids home for a few days and spend some time together cooking, baking, decorating and relaxing. It has been a very hectic fall season, so I’m ready to hibernate a bit and have fun with my family 🙂

We’re also having a dinner guest early in the week, so I’ll be making one of our favorite casseroles that night, along with a yummy dessert to enjoy. I’m also testing out my new mini loaf pan this week, so be sure to come back and see what holiday goodies I have whipped up with that…I’ll be sure to post the recipe for you.

Here’s what I’m making this week:

Monday: Spaghetti and meatballs, veggies

Tuesday: Chicken Enchilada Casserole, veggies, chocolate chip cake

Wednesday: Homemade pizza, salad

Thursday: Thanksgiving: turkey, potatoes, stuffing, gravy, corn, cranberry sauce, rolls and pumpkin pie

Friday: Tortellini Soup, leftover rolls

Saturday: Hamburgers in gravy over rice, veggies

Sunday: Eat Out

I’ll also be making some turkey broth from the leftover carcass late in the week or over the weekend.

    Looks like you have a great menu planned out this week, Erin.

    I used to make Tortellini soup often but since my kids are allergic to dairy we can’t have it anymore. Maybe if I learn how to make the tortellini I can make it dairy free.

    I also make a dish with hamburgers in bbq sauce, it is so good. I’m sure yours with the gravy is so yummy too.

    A delicious line up at your house this week.
    Thanksgiving is probably my favorite holiday/event/celebration as well. We’ll be having the traditional turkey, but also a ham (serving 30 people this year!) I love the stuffing and cranberries, and of course dessert too. And the leftovers!

      You are brave to cook for 30 people…I don’t know if I have enough pots and pans to make food for that many people! I hope you dinner goes well and that you have a Happy Thanksgiving!
