Happy Monday! I hope you’ll get your week off to a good start with a helpful menu plan 🙂
Our menu plan pretty much went out the window last week. After 2 successful days making meals from the plan, a bunch of stuff happened later in the week…and all around dinner time…that took up any meal prep time and ended up with us eating out.
My car was hit by a big block of ice while driving on the highway. It flew up out of the back of a pickup bed, went airborne and landed on my car, smashing the windshield, the hood, part of the grill and taking out the passenger-side rear-view mirror.
Luckily, I wasn’t hurt, and I was able to make it home safely. But dealing with the insurance company and getting a rental car cost most of the afternoon and evening.
And that was just one example of the crazy week we had last week!
So, you’ll notice several of the same meals repeated from last week’s menu, just because I still had all the meat in the freezer for those meals.

Turkey or ham and cheese in low-carb wrap (S)
Taco Chicken Bowls, brown rice (E)
Turkey Corn Chili, baked corn chips (E)
BBQ Meatballs, cauliflower, green beans (S)
Bacon Ranch Chicken Casserole (S)
Corned Beef, cabbage (S)
Coney Island Casserole, salad (S)
Eat Out (S)
