Menu Plan Monday

Happy Monday! I hope you’ll get your week off to a good start with a helpful menu plan ๐Ÿ™‚

Get a jump start on your week by making a menu plan!

Our menu plan pretty much went out the window last week. After 2 successful days making meals from the plan, a bunch of stuff happened later in the week…and all around dinner time…that took up any meal prep time and ended up with us eating out.

My car was hit by a big block of ice while driving on the highway. It flew up out of the back of a pickup bed, went airborne and landed on my car, smashing the windshield, the hood, part of the grill and taking out the passenger-side rear-view mirror.

Luckily, I wasn’t hurt, and I was able to make it home safely. But dealing with the insurance company and getting a rental car cost most of the afternoon and evening.

And that was just one example of the crazy week we had last week!

So, you’ll notice several of the same meals repeated from last week’s menu, just because I still had all the meat in the freezer for those meals.

As usual, my menu plan is Trim Healthy Mama-friendly. If you aren’t familiar with Trim Healthy Mama, head over to read all about how I became a Trim Healthy Mama and lost 35 pounds in 7 months.

Here’s what’s on the menu this week:

Breakfasts
Eggs, berries (S)
Oatmeal with a scoop of protein powder, 1/2 banana (E)
Scrambled Eggs with cheese, bacon, berries (S)
Sprouted wheat waffles, chicken bacon, berries (Crossover)

Lunches
Leftovers most days
Turkey or ham and cheese in low-carb wrap (S)

Dinners
Taco Chicken Bowls, brown rice (E)
Turkey Corn Chili, baked corn chips (E)
BBQ Meatballs, cauliflower, green beans (S)
Bacon Ranch Chicken Casserole (S)
Corned Beef, cabbage (S)
Coney Island Casserole, salad (S)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook and the Food for Life Cookbook (affiliate links). We’ve been using the THM cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

    1. Thanks Amber! I think I was more in shock than scared at first…I mean, it was just so weird to get hit by a big block of ice!

Hope you try out some of the recipes. The Bacon Ranch Chicken Casserole is especially good!

  1. I’m so glad you weren’t hurt. Ice and snow can be hazardous in so many ways.

I hope this week is less eventful for you and you can eat dinner at home this week.
