Menu Plan Monday

Happy Monday! My whole family is home today since it’s President’s Day, and the weather is supposed to be beautiful…60 degrees in February!…so it’s going to be a fun and relaxing day off here ๐Ÿ™‚ We’re even going to try to grill today, something I wasn’t expecting to put on my menu plan in the middle of winter!

I did much better staying on plan this week, although I didn’t get all my exercise in. I had planned to go for a run last Thursday morning, but it was 32 degrees and very windy, so I skipped my exercise and ran errands instead.

Just goes to show you the weird winter we’re having…32 degrees one day, near 70 the next. My body can’t get used to the big swings in temperature ๐Ÿ™

Luckily, my son loves to go to the gym so he can play in the kid area while I work out. He’ll be my motivation to get to the gym today.

Breakfasts
Eggs, berries (S)
Oatmeal with a scoop of protein powder, 1/2 banana (E)

Bust-A-Myth Banana cake, greek yogurt, berries (E)

Lunches
Leftovers most days
Turkey or ham and cheese in low-carb wrap (S)

Dinners
Chicken Parmesan, broccoli (S)
Egg Roll in a Bowl (S)
London Broil on the grill, broccoli (S)
Chicken Fajitas (S)
Homemade pizza, salad (Crossover)
Meatloaf, collagen-creamed spinach (S)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook and the Food for Life Cookbook (affiliate links). We’ve been using the THM cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

  1. Last year we had crazy swings in weather this time of year. But this year is a more normal weather for us rainy and in the 40’s.

    I hope you have a great day off, my hubby works today and we’ll be doing homeschooling too. But it will be a lighter day with schooling.

    I hope you’re able to grill too. I’ll be grilling chicken tonight, I’m picking up 40 pounds of chicken from Zaycon Fresh. I’ll make freezer packs with most of it but I’ll grill about 4-5 pounds for the freezer. It’s nice having precooked chicken in the freezer. I use it in casseroles and in soups.

    1. My dad is getting so much rain this year (he lives in California), which is great, since they’ve had a bad drought for many years, but I know that it’s becoming a bit too much, with some of the dams needing to be opened.

      Being able to grill in February is so nice! And having some grilled chicken ready to go for recipes is extra nice!

  2. I hope your family has a great day off and you get to grill today, Erin! Beautiful weather is a blessing. We’ve been enjoying it here in Florida, but even my family in IL is experiencing great weather lately, too. It’s so nice! ๐Ÿ™‚

    1. Yes, I just love that winter is mild this year. While I usually love winter, I get tired of being so cold around late January/early February.
