Happy Monday! Are you ready for the week with your menu plan?
After being sick again last week, I’m happy to be on the mend and ready with a whole week’s worth of yummy meals to make for my family.
I ended up with strep throat again last week (just had it in late November), so I had a few down days and didn’t get around to posting my menu. Luckily, I had made up my menu and done my grocery shopping right before I came down with a fever, so we were all set for meals throughout the week…which was such a nice thing to not to have to worry about while I was sick.
We ate quite a bit out of my new Food for Life cookbook, and just love the recipes we’ve tried. Last night’s Wet Burritos were pretty easy to make and tasted great.

Here’s what’s on the menu this week:
Eggs, berries (S)
Oatmeal with a scoop of protein powder, 1/2 banana (E)
Scrambled Eggs with cheese, bacon, berries (S)

Turkey and cheese in low-carb wrap (S)
Wet Burritos, salad (S)
Spaghetti (spaghetti squash) with Italian Sausage, broccoli (S)
Cajun Cream Chicken, salad (S)
Salisbury Steak, collagen creamed spinach (S)
Sweet and Sour Chicken, brown rice (E)
Hamburgers, sweet potato fries (Crossover)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook and the Food for Life Cookbook (affiliate link). We’ve been using the THM cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
