Menu Plan Monday

Happy New Year everyone! I hope you had a great holiday week ๐Ÿ™‚ I took some time off from the blog and spent a lot of time watching movies with the kids, reading books and just taking time to rest. I didn’t know how tired I was from so much work over the past few months. But I’m ready to get back to our regular routine this week, which includes a full menu plan!

Get a jump start on your week by making a menu plan!

I was so excited to receive the THM-compatible cookbook Food for Life as a Christmas gift from my husband. It’s a little pricey…I think it’s around $35…so I hesitated to buy it earlier in the year, despite hearing so many good review about it in the THM Facebook group.

But when my husband asked me what I wanted for Christmas, I told him about the book and he got it for me. I made some Chocolate muffins for breakfast this past weekend, and they were a hit! I’m excited to try out some of the dinner recipes this week, especially the General Tso’s meatballs…we really miss having General Tso’s chicken from our local Chinese take-out!

Here’s what’s on the menu this week:

Breakfasts
Eggs, berries (S)
Oatmeal with a scoop of protein powder, 1/2 banana (E)
Chocolate Breakfast Muffins, cottage cheese, 1/2 banana (E)
Scrambled Eggs with cheese, bacon, berries (S)

Lunches
Leftovers most days
Turkey and cheese in low-carb wrap (S)

Dinners
Oven Chicken Fajitas with low-carb tortillas, salad (S)
General Tso’s Meatballs and Rice, broccoli (E)
Sausage Sweet Potato and Apple Bake (E)
Pan-fried Pork Chops, Broccoli Salad (S)
BBQ Meatballs, cauliflower rice, green beans (S)
Ham and Bean Soup in the slow cooker (Crossover)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook and the Food for Life Cookbook (affiliate link). We’ve been using the THM cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

  1. I hope the General Tso’s meatballs turn out good. I bet you could make the sauce that you use in that recipe and use it over chicken too. I hope you have a great week and happy new year!
