Menu Plan Monday

Happy Monday! Are you all ready for Thanksgiving? It seems like Thanksgiving sort of snuck up on me this year…I can’t believe that it’s only a few days away…and that the Christmas season is almost here too!

Get a jump start on your week by making a menu plan!

This week’s menu plan is a little bit lighter than usual, since we’ll be having a big meal on Thursday. Last year at this time, we were just in the beginning stages of our Trim Healthy Mama eating plan, and I was so afraid of getting knocked off plan and not being able to get back on, that I made every single Thanksgiving dish fit the plan. It was pretty good for the most part, except for the stuffing, which I made from dried Swiss bread…it was just plain awful.

This year, however, I’m going with a more traditional Thanksgiving dinner, since we are close to our goal weights. There’s a lot to be said for the ability to really enjoy the feast that comes with a special holiday like this, so I’m making traditional bread stuffing and a real pumpkin pie, but cutting out the potatoes, since we don’t need too many starches…we likely won’t even miss them.


We’ll also enjoy some Turkey Corn Chili the day after, which makes a pretty good E meal if you use the white meat from the turkey and limit the corn a bit. I’ve been making this yummy soup for years…it’s become a Black Friday dinner tradition.

I’ll also use up my turkey carcass by making my friend Shelly’s Turkey Soup Kits. Her method for making a rich turkey bone broth in the crock pot is awesome! The soup is not only easy-to-make, but healthy and frugal too…and something nice to pull out of the freezer on a night when I don’t want to cook.

Sour Cream Beef Enchiladas, salad (S)
Salmon Patties, coleslaw, deviled eggs (S)
Taco Chicken Bowls, brown rice (E)
Thanksgiving dinner: turkey, stuffing, gravy, green beans, cranberry sauce, pumpkin pie (Off plan)
Turkey Corn Chili, baked corn chips (E)
Homemade Pizza, salad (XO)
Eat Out (S)

    I hope you had a great Thanksgiving with yummy food and fun times with your family. I’m so glad you like the turkey soup kits. I made 5 for the freezer and we’ll be using one of them for turkey noodle soup or turkey pot pie today.
