Menu Plan Monday

Thanks to daylight savings time ending, I was up at 4:15 this morning…what a way to start a Monday! I have a feeling I’m going to be tired by dinner time, so I’m thankful to have a menu plan all ready and groceries in my fridge to make meal time easier.

Get a jump start on your week by making a menu plan!

I tried out a new-to-me recipe for pot roast last night, and unfortunately, it was not good 🙁 The meat was very underseasoned, and the gravy was so peppery that we couldn’t eat it. The recipe was similar to the beef stew that we’ve enjoyed many times, so I thought the roast would be just as delicious, but it didn’t turn out that way. At least there weren’t many leftovers 😉

I’m hoping that the other new recipes I’m trying this week are better than yesterday’s dinner…my son has been asking for something with hot dogs, and Mrs. Criddle’s Coney Island Casserole seems like a winner. Hopefully it will go over well with the kids.

As usual, my menu plan is Trim Healthy Mama-friendly. If you aren’t familiar with Trim Healthy Mama, head over to read all about how I became a Trim Healthy Mama and lost 35 pounds in 7 months.

Here’s what’s on the menu this week:

Eggs, berries (S)
Pumpkin Baked Oatmeal, half apple (E)
Scrambled Eggs with cheese, bacon, berries (S)

Leftovers most days
Ham and cheese in low-carb wrap (S)

Pot Roast with radishes and peppers (S)
Bangin’ Ranch Drums, asparagus (S)
Coney Island Casserole, salad (S)
Easy Mexican Casserole, salad (S)
Beef Stroganoff, brown rice, veggies (E)
Hamburgers, salad (S)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbookblank (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

Sorry to hear your pot roast wasn’t good. the Coney Island casserole sound interesting. That’s something my son would enjoy I’m sure.

I too was up at 4 this morning, darn time change throwing me off too. I hope your day goes well and maybe you can sneak in a 15 minute nap today.

Thanks Shell…I’m hoping the kids like the casserole…they do like hot dogs, so it should be a hit 🙂

Hopefully you were able to get a nap!

I’m sorry to hear the pot roast recipe wasn’t a winner. I hope the new casserole recipe turns out a lot better, Erin. 🙂

I’m not a huge fan of Daylight Savings, either, because I don’t like that it gets dark so early. The kids wanted to play outside around 5PM today, and it was already so dark. 🙁
