Thanks to daylight savings time ending, I was up at 4:15 this morning…what a way to start a Monday! I have a feeling I’m going to be tired by dinner time, so I’m thankful to have a menu plan all ready and groceries in my fridge to make meal time easier.
I tried out a new-to-me recipe for pot roast last night, and unfortunately, it was not good 🙁 The meat was very underseasoned, and the gravy was so peppery that we couldn’t eat it. The recipe was similar to the beef stew that we’ve enjoyed many times, so I thought the roast would be just as delicious, but it didn’t turn out that way. At least there weren’t many leftovers 😉
I’m hoping that the other new recipes I’m trying this week are better than yesterday’s dinner…my son has been asking for something with hot dogs, and Mrs. Criddle’s Coney Island Casserole seems like a winner. Hopefully it will go over well with the kids.
As usual, my menu plan is Trim Healthy Mama-friendly. If you aren’t familiar with Trim Healthy Mama, head over to read all about how I became a Trim Healthy Mama and lost 35 pounds in 7 months.
