Menu Plan Monday

Happy Halloween! Are you all ready for trick-or-treating tonight? I have to say that I’m not looking forward to it too much…staying out late on a school night is not my idea of fun (because it means cranky kids on Tuesday).

Get a jump start on your week by making a menu plan!

The one thing I am happy about is the fact that I get a few nights off from cooking this week! There’s a Halloween party in our neighborhood tonight, which takes care of dinner, and then we’re having leftovers one night because of all the extras I cooked this weekend.

I was also pretty excited to discover a recipe for Pumpkin Baked Oatmeal on Mrs. Criddle’s Kitchen when I was there getting the recipe for Sweet and Sour Chicken on Saturday. I made myself the full recipe (I say myself because I’m probably the only one that will eat it…) so I have breakfast all ready for 5-6 days this week. Yay for batch cooking!

Here’s what’s on the menu this week:

Eggs, berries (S)
Pumpkin Baked Oatmeal, half apple (E)
Scrambled Eggs with cheese, bacon, berries (S)

Leftovers most days
Ham and cheese in low-carb wrap (S)

BBQ Meatballs, cauliflower, green beans (S)
Sweet and Sour Chicken, brown rice (E)
Cowboy Grub, baked chips (E)
Spaghetti with Italian sausage, spaghetti squash, salad (S)
Eat at party (S chili)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbookblank (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
