Menu Plan Monday

After a very warm week, the fall weather has finally arrived here in Maryland! I’m so happy about it too ๐Ÿ™‚ Although it’s not yet as chilly as I would like, it means I can finally put oven meals and soups back into my menu plan!

Get a jump start on your week by making a menu plan!

We tried out a new-to-us meal last night for dinner, and it was delicious! I can heartily recommend the Chicken Cordon Bleu Casserole from Joy Filled Eats…we all loved it, except my son, who peeled off the Swiss cheese, although he did eat the chicken and ham and sauce. I made half a recipe, since I didn’t know if we would like it, but now I wish I had made the full dish, because that would mean leftovers for lunch today ๐Ÿ™‚

I’m doing two other oven-made dinners this week, and a couple of skillet meals, which I love for their quick clean-up.

Turkey and cheese in low-carb wrap (S)

Meatloaf, mashed cauliflower (S)
Bangin’ Ranch Drums, salad (S)
Taco Night (ground beef, cheese, lettuce, salsa, sour cream, with chips for the kids) (S)
Cabb and Saus skillet, deviled eggs (S)
Pizza (using Gwen’s crust), salad (Crossover)
Chicken Cordon Bleu Casserole, salad (S)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
