Good morning! It’s a bit rainy and cloudy here today…not a fun start to the week, but at least I’ve got my menu plan all done, so it’s one less thing to think about 🙂
I think my kids must be going through growth spurts right now, because it seems I can’t keep enough food in the house for them. I always do my grocery shopping on Saturdays, but last week, I had to take an extra trip to Aldi on Thursday to get some more snack and staples because our fridge looked pretty bare.
I’ve also been making really big portions at dinner so that we have lots of leftovers for lunches, which has been great. It’s nice to have something already prepped to heat up quickly at lunchtime.
My fridge is so packed right now that I will be super surprised if it’s completely empty at the end of the week!

Beef Stroganoff, rice, green beans (E)
Cajun Cream Chicken, salad (S)
Salisbury Steak, mashed cauliflower, asparagus (S)
