Menu Plan Monday

Good morning! It’s a bit rainy and cloudy here today…not a fun start to the week, but at least I’ve got my menu plan all done, so it’s one less thing to think about 🙂

Get a jump start on your week by making a menu plan!

I think my kids must be going through growth spurts right now, because it seems I can’t keep enough food in the house for them. I always do my grocery shopping on Saturdays, but last week, I had to take an extra trip to Aldi on Thursday to get some more snack and staples because our fridge looked pretty bare.

I’ve also been making really big portions at dinner so that we have lots of leftovers for lunches, which has been great. It’s nice to have something already prepped to heat up quickly at lunchtime.

My fridge is so packed right now that I will be super surprised if it’s completely empty at the end of the week!

Here’s what’s on the menu this week:

Eggs, berries (S)
Oatmeal, Triple 000 yogurt, half nectarine (E)
Scrambled Eggs with cheese, bacon, berries (S)

Leftovers most days
Turkey and cheese in low-carb wrap (S)

Burgers on the grill, sweet potato fries (XO)
Ridiculous Meatballs and Spaghetti (spaghetti squash for hubby and me, regular pasta for kids), salad (S)
Beef Stroganoff, rice, green beans (E)
Cajun Cream Chicken, salad (S)
Salisbury Steak, mashed cauliflower, asparagus (S)
Eat Out (S)

    It was really rainy here over the weekend which was a bummer since I wanted to get more painting done. Maybe there will be a break in the weather this week.

    This week on our menu, we’ll be having spaghetti with meat sauce, pan-fried pork chops, and a dish we haven’t had in a while chili cornbread.

    Beef stroganoff sounds really good, I’ll have to add it to our menu plan soon. I haven’t made it in a while.

      Hopefully you will get some time to finish painting soon. We had a little bit of rain early in the week, and it’s been cooler, but not that really nice fall weather that I’ve been looking forward to.

    I can totally relate to having kids with big appetites right now. I have several of my own, and it seems like I’m constantly feeding someone. LOL
