Happy Monday and Happy Labor Day! I hope that you get to enjoy one last long weekend with your family before summer is officially over 🙂 We’re actually taking Labor Day to do some labor around the house and yard, so I’m happy to already have my menu plan all figured out so that I don’t have to worry about dinner.
This week is going to be one of those super crazy weeks where we have something to do every single night…back to school nights (two of them!), piano lessons, youth group, cub scouts and a back to school picnic. Because we won’t have much time for dinner, I’ve chosen quick-cooking dinners, and I’ll be making some things in advance to make things go even faster.
For example, we’ll need rice for both our Sweet and Sour Chicken night and our Cowboy Grub night, so I’ll just make a big batch tonight and use the leftovers for the next dish tomorrow night. Precooking the chicken for the Bacon Ranch Chicken casserole will save me a lot of time too.
My weight loss took a wrong turn last week, as the scale showed I actually gained almost 4 pounds. I did have a some off-plan foods last week, but nothing that would add up to 4 pounds. I’m hoping most of that 4 pounds came from water weight, as I’m prone to it before my cycle. I’ll weigh in on Wednesday this week (gym classes are cancelled today for the holiday), and hope that I see a better number on the scale.
