Menu Plan Monday

Happy Monday and Happy Labor Day! I hope that you get to enjoy one last long weekend with your family before summer is officially over ๐Ÿ™‚ We’re actually taking Labor Day to do some labor around the house and yard, so I’m happy to already have my menu plan all figured out so that I don’t have to worry about dinner.

Get a jump start on your week by making a menu plan!

This week is going to be one of those super crazy weeks where we have something to do every single night…back to school nights (two of them!), piano lessons, youth group, cub scouts and a back to school picnic. Because we won’t have much time for dinner, I’ve chosen quick-cooking dinners, and I’ll be making some things in advance to make things go even faster.

For example, we’ll need rice for both our Sweet and Sour Chicken night and our Cowboy Grub night, so I’ll just make a big batch tonight and use the leftovers for the next dish tomorrow night. Precooking the chicken for the Bacon Ranch Chicken casserole will save me a lot of time too.

My weight loss took a wrong turn last week, as the scale showed I actually gained almost 4 pounds. I did have a some off-plan foods last week, but nothing that would add up to 4 pounds. I’m hoping most of that 4 pounds came from water weight, as I’m prone to it before my cycle. I’ll weigh in on Wednesday this week (gym classes are cancelled today for the holiday), and hope that I see a better number on the scale.

As usual, my menu plan is Trim Healthy Mama-friendly. If you aren’t familiar with Trim Healthy Mama, head over to read all about how I became a Trim Healthy Mama and lost 35 pounds in 7 months.

Here’s what’s on the menu this week:

Breakfasts
Eggs, berries (S)
THM Pancakes, cottage cheese, berries (E)
Oatmeal, Triple 000 yogurt, half peach (E)
Scrambled Eggs with cheese, bacon, berries (S)

Lunches
Leftovers most days
Turkey and cheese in low-carb wrap (S)
Sweetie on Steroids (E)

Dinners
Cowboy Grub, Gwen’s fuel pull corn muffins (E)
Bacon Ranch Chicken Casserole, green beans (S)
Pizza, salad (S)
Taco Night (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

  1. I hope this week isn’t too busy for you. We’ll be starting back to school also this week, but not quite as busy as your week will be. It’s smart of you to make items ahead of time to help with getting dinner done quickly. We do the same at our house too. It’s amazing how doing just a few things ahead can make a big difference.

I hope you have a great week. Your menu looks great too.
