Menu Plan Monday

It’s finally here…the first day of school! Being back to a more busy schedule means that I’m planning more quick dinners in my menu plan, so that we can get to all our practices and other activities without having to eat out.

Get a jump start on your week by making a menu plan!

Unfortunately, it’s still pretty hot in our area, so I’m limiting the use of my oven again this week. I’m going to try making fajitas in my slow cooker (I usually like doing them in the oven), and we’re having a nice, big green salad one night for dinner. I’ll also try out a new-to-us recipe for Chinese that looks very promising 🙂

Last week I told you that I gained 3 pounds from all my vacation cheating, but I was able to erase 1 1/2 pounds of that gain. Now that the kids are back to school, I can get back to my regular gym schedule of 4 days/week, which should help me lose even faster 🙂

Here’s what’s on the menu this week:

Eggs, berries (S)
Cottage Berry Whip (FP)
Oatmeal, Triple 000 yogurt, half peach (E)
Scrambled Eggs with cheese, bacon, berries (S)

Leftovers most days
Turkey and cheese in low-carb wrap (S)
Sweetie on Steroids (E)

Chicken Fajitas in the crockpot (with low-carb tortillas, cheese, sour cream), salad (S)
Spaghetti with zucchini noodles (regular pasta for the kids), broccoli (S)
BBQ Meatballs (sauce made with sugar-free ketchup and Gentle Sweet), cauli rice, green beans (S)
Trim Mac Salad (S)
Sweet and Sour Chicken, rice (E)
Burgers on the grill, coleslaw (S)
Eat Out (S)

    I hope your fajitas turn out good in the crockpot. I’ve made them in the crockpot before but the peppers turned out too mushy for us. I hope yours turns out better.

      The fajitas turned out pretty well…the peppers were soft, but not too mushy, but there was quite a bit of liquid in the pot, which was not ideal. But at least cooking them in the slow cooker helped keep the kitchen cooler 🙂
