It’s finally here…the first day of school! Being back to a more busy schedule means that I’m planning more quick dinners in my menu plan, so that we can get to all our practices and other activities without having to eat out.
Unfortunately, it’s still pretty hot in our area, so I’m limiting the use of my oven again this week. I’m going to try making fajitas in my slow cooker (I usually like doing them in the oven), and we’re having a nice, big green salad one night for dinner. I’ll also try out a new-to-us recipe for Chinese that looks very promising 🙂
Last week I told you that I gained 3 pounds from all my vacation cheating, but I was able to erase 1 1/2 pounds of that gain. Now that the kids are back to school, I can get back to my regular gym schedule of 4 days/week, which should help me lose even faster 🙂
