This week will be a turkey kind-a week around here…I had a turkey in my freezer from last Thanksgiving (bought an extra one while the sales were good), so I decided to cook it yesterday for Sunday dinner. It smelled so good in the house while the turkey was roasting, and it has given me a lot of extra meat to use in some recipes this week.
Here’s my turkey menu for the week:
Monday: Turkey Enchiladas, Spanish rice, veggies
Tuesday: Spaghetti with meat sauce, veggies
Wednesday: BBQ Meatballs, rice, veggies
Thursday: Eat Out at fundraiser night for our daughter’s school
Friday: Breakfast: French Toast, bacon or sausage, fruit
Saturday: Turkey Corn Chili with chips, cheese, sour cream and other toppings
Sunday: Roasted Turkey, stuffing, gravy and green beans
