Menu Plan Monday

This week will be a turkey kind-a week around here…I had a turkey in my freezer from last Thanksgiving (bought an extra one while the sales were good), so I decided to cook it yesterday for Sunday dinner. It smelled so good in the house while the turkey was roasting, and it has given me a lot of extra meat to use in some recipes this week.

Here’s my turkey menu for the week:

Monday: Turkey Enchiladas, Spanish rice, veggies

Tuesday: Spaghetti with meat sauce, veggies

Wednesday: BBQ Meatballs, rice, veggies

Thursday: Eat Out at fundraiser night for our daughter’s school

Friday: Breakfast: French Toast, bacon or sausage, fruit

Saturday: Turkey Corn Chili with chips, cheese, sour cream and other toppings

Sunday: Roasted Turkey, stuffing, gravy and green beans

  1. Your menu looks good this week Erin. This is the perfect time of year to make chili.

    This week I’m making some easy meals, stir fry, macaroni and beef skillet dish and I’m making a beef roast one night and using the leftovers for beef noodles.
