Menu Plan Monday

Happy Monday! Are your kids starting school today? My kids start next week, so we’re trying to cram in as much summer fun as we can this week…hopefully we’ll make it to the pool a few times and have lots of play time with friends.

Get a jump start on your week by making a menu plan!

So the vacation cheating that I talked about last week cost me 3 pounds 🙁 I was better this week, but still enjoyed a few off-plan meals. Now that summer is just about over, my husband and I are making a renewed push to get back on plan 100% and lose the last 15 pounds. They are definitely coming off more slowly than they did at the beginning of our weight-loss journey, but we are committed to finish this.

Lunches
Leftovers most days
Turkey and cheese in low-carb wrap (S)
Sweetie on Steroids (E)

Dinners
Grilled Pork Chops, loaded cauliflower (S)
Beef stroganoff, rice, broccoli (E)
Taco Night (taco seasoned ground beef, cheese, salsa, sour cream, lettuce), chips for the kids (S)
Chicken Parmy, zucchini noodles, salad (S)
Meatloaf, mashed cauliflower, green beans (S)
Bangin Ranch Drums, salad (S)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

  1. Oh, meatloaf sounds good but it’s been too warm to think about turning on the oven lately. Hopefully, it will cool down after the weekend. I hope you have a great week Erin.
