Happy Monday! Hope your weekend was a good one 🙂 I’m back at menu planning this week after being out of town on a short vacation, and boy, let me tell you…I’m anxious to get back to eating at home after so many meals out.
We had a great time away, and enjoyed so many nice meals, but we didn’t stick 100% to plan. I haven’t weighed in yet to see if I have gained anything, but my clothes feel the same, so I don’t think I did too much damage. I’ve been drinking a lot of Good Girl Moonshine over the past few days to try to help me get back on track, however.
It’s super hot in our neck of the woods right now, so I’m trying to plan oven-free meals in order to keep my kitchen cool. I’ve been wanting to try my friend Shelly’s pulled pork recipe, though, so I’ll probably do that in the oven today, which is supposed to be the coolest day of the week. She does her pork on a grill, but I don’t have a grill that will keep hot for 5 hours.

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
