Menu Plan Monday

Good Monday morning to you! It’s early, but I’m up and ready for the week with my menu plan!

Get a jump start on your week by making a menu plan!

Well, I made it through VBS week last week, although we did eat out one one extra time than I had planned ๐Ÿ™ The kids had a great time again this year, especially because so many of their friends attended with them. I’m just happy to get back to a more normal routine this week.

We’re expecting another round of very hot weather again, so I’m planning to make mostly skillet and crockpot meals this week. I’m trying out two new recipes that I found on Pinterest, and if they taste anything like how good their pictures look, then I’ll have a happy family on my hands for dinner ๐Ÿ™‚

As usual, my menu plan is Trim Healthy Mama-friendly. If you aren’t familiar with Trim Healthy Mama, head over to read all about how I became a Trim Healthy Mama and lost 35 pounds in 7 months.

Here’s what’s on the menu this week:

Breakfasts
Eggs, berries (S)
Cottage Berry Whip, 1 slice sprouted wheat toast (E)
Bust-A-Myth Banana Cake, peaches (E)
Scrambled Eggs with cheese, sausage, berries (S)

Lunches
Leftovers most days
Tuna salad or turkey on low-carb pita (S)

Dinners
Lemon Chicken in the Crock Pot, mashed sweet potatoes, green beans (E)
Turkey Enchiladas (in low-carb tortillas), salad (S)
Amish One-Pan Ground Beef and Cabbage Skillet (S)
Lazy Lasagna in the Crock Pot, salad (S)
Fiesta Quinoa Chicken Skillet, broccoli (E)
Pan-fried pork chops, broccoli (S)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
