Happy Monday! Hope you all had a great weekend, and are ready to start a new week with a menu plan!
This week is the week my kids have been waiting for all year long…Vacation Bible School week! I’m in charge of the snacks this year, which I think is going to be a lot of fun. I went to our local warehouse store on Friday and picked up most of the supplies that I’m going to need to feed 50 kids this week. The only thing I have to do this week is shop for fresh produce the night before the snacks that require fruits and veggies.
Because I’m going to be out of the house for most of week, I know that I’m going to be tired and unwilling to cook a big meal when dinner time rolls around. So I’ve planned to serve some easy skillet meals and a couple things that I’ve made a million times before, so I can throw it together without much thinking.
I’m also trying lasagna in the crock pot this week, something my friend Shelly at Frugal Family Home suggested. There are so many great Trim Healthy Mama meals that have to be cooked in the oven, but with all this really hot weather lately, I haven’t wanted to use the oven (or else the kitchen gets really hot). She suggested I try making my lasagna in the slow cooker, which I’ve done before with traditional recipes that contain noodles. The THM recipe has no noodles, so I’m curious to see how it turns out.

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
