Happy Monday everyone! I took last week off from posting my menu, since it was a holiday…hopefully you all had a wonderful 4th of July 🙂 We had planned to grill some steaks, but the weather didn’t cooperate…it rained quite a bit in the afternoon…so I cooked them on the stove instead and then we watched fireworks on TV.
We’ve really been enjoying our grill over the past couple of weeks, and I’m using it again for my menu this week, along with crock pot and skillet meals to keep our kitchen a bit cooler during this hot weather.
One of the fun things that we’re planning to do this week is visit Chick-fil-A for Cow Appreciation Day. If you come by CFA dressed in anything “cow” (a cow-print scarf or shirt, for example), they will give you a free entree item! We’re aiming to go around lunch time, so that I can get their delicious Cobb Salad, which fits on-plan perfectly 🙂

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
