Menu Plan Monday

One week of summer vacation is already come and gone! Although we’re taking it slower with kids activities and commitments this time of year, I’m still making sure to plan out my menu each week to make meal time easier.

Get a jump start on your week by making a menu plan!

I searched Pinterest this week for a new recipe to try out, as I had run out of dinner ideas, and I ran across a casserole that sounded really good: Bacon Ranch Chicken Casserole from JoyFilledEats.com. It’s a simple dish that comes together quickly and my whole family loved it! We ate half for dinner one night, and the other half for lunch the next day. It’s definitely going into the meal rotation from now on, it’s that good.

I lost one pound last week and even managed to get in three workouts with the kids home from school (and driving one back and forth to Cub Scout camp all week). My oldest somehow caught a stomach bug late last week, however, so I’m not sure if we’ll be able to get to the gym much this week, so I’ll have to workout from home.

Here’s what’s on the menu this week:

Breakfasts
Eggs, berries (S)
Strawberry Big Boy Smoothie (FP)
Trim Healthy Pancakes, cottage cheese, banana (E)
Scrambled Eggs with cheese, sausage, berries (S)

Lunches
Leftovers most days
Tuna salad on low-carb pita (S)

Dinners
Cowboy Grub, brussels sprouts (E)
Bacon Ranch Chicken Casserole, green beans(S)
Spaghetti (zucchini noodles for hubby and me) with Italian sausage, salad (S)
Taco Night (taco-seasoned ground beef, cheese, lettuce, tomatoes, salsa, sour cream, on low-carb tortillas) (S)
Swedish Meatballs on riced cauliflower, broccoli (S)
Bangin’ Ranch Drumsticks, salad (S)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

  1. Oh, I haven’t made Swedish meatballs in a while, I really should add them to our menu plan. The rest of your menu looks great. I hope the rest of you stay well and your daughter feels better soon. It’s no fun being sick in the summer.

    1. Thanks Shelly! She is back to her old self today, thankfully. I think the rest of us managed to escape it…at least nobody has come down with any symptoms ๐Ÿ˜‰

  2. Your menu plan looks delicious, Erin! I’m sorry to hear that your daughter is sick, though. ๐Ÿ™ I’ll be praying she gets over the stomach bug soon and that the rest of your family doesn’t get it!!

    On a side note, I think I need to make spaghetti with Italian sausage for my family someday. That’s how my mom would make it when we were growing up and I think my kids would enjoy having it that way. I hope you have a great week, Erin!

    1. I love using Italian sausage in my spaghetti sauce because it has such nice flavor. I like it a lot better than using plain ground beef or turkey. ๐Ÿ™‚
