Summer is finally here and that means grilling! I’m so excited to finally be able to grill consistently, so this week’s menu has a few outdoor grilling meals to enjoy 🙂
School is finally out for the summer too, so we don’t have any lessons to rush around to at dinner time and can take more time preparing the meal.
We’re trying out a couple new recipes this week that are Trim Healthy Mama (THM) friendly: a Bacon Ranch Chicken Casserole and a Taco Salad that has received a lot of rave reviews. I’m also grilling twice for dinner this week, and making my husband’s favorite dinner for Father’s Day (Chicken Parmesan).
When I went back to the gym last week, I discovered that I had gained 2 pounds from all the little cheats that I’d eaten over the previous two weeks. So it’s back on board the THM train for me…I have to finally get this last 15 pounds off and gone for good.

Grilled Pork Chops, loaded cauliflower (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
