Menu Plan Monday

Happy Monday to you! Hope you all had a great weekend and are ready for a new week and meal plan!

Get a jump start on your week by making a menu plan!

We had a pretty busy weekend around here, with our daughter participating in two 5Ks on back-to-back days. We were surprised that she wanted to take on such a big challenge, but she insisted that she would be OK. So we decided that my husband would run with her in Saturday’s race and that I would run with her in Sunday’s race.

She finished Saturday with a pretty bad side stitch, but we paced ourselves better on Sunday and finished pain-free. Here she is in both events:

Running Weekend

On Saturday, we rewarded the runners with breakfast at Chick-fil-A and on Sunday with good ol’ pizza from our local pizza shop. After eating a few naughty foods at those restaurants, we’re planning to really stick to our Trim Healthy Mama plan this week. I haven’t weighed in for two weeks, as my gym is closed for their annual summer shutdown, so without my weekly check-in, it’s important not to veer too much off plan! Luckily, with all the yummy food on this week’s menu, that won’t be too hard to do.

Here’s what’s on the menu this week:

Breakfasts
Eggs, berries (S)
Strawberry Big Boy Smoothie (FP)
Oatmeal, cottage cheese, banana (E)
Scrambled Eggs with cheese, sausage, berries (S)

Lunches
Leftovers most days
Light Progresso Soup, 2 Wasa crackers with light cheese (E)
Turkey sandwich on Easy E Bread, orange (E)

Dinners
Beef Stroganoff, rice, asparagus (E)
Cabb and Saus Skillet (kielbasa and cabbage), deviled eggs (S)
Spaghetti with Italian sausage (hubby and I will have zucchini noodles), broccoli (S)
Pan-fried Pork Chops, mashed cauliflower, broccoli (S)
Lemon Chicken, rice, green beans (E)
Cub Scout BBQ (I’m bringing on-plan coleslaw)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

  1. Way to go for all of you getting out and doing the 5K’s. This past weekend we just tried to stay cool, it was 100 degrees for both Saturday and Sunday. That hot of weather is really unusual for us so early in the summer. I’m hoping that doesn’t mean a hot summer for us.

    1. Thanks Shelly! I was afraid that it was going to be hot and humid, but it was a nice temperature with a good breeze, so it was a bit easier to run.

      I can’t believe all the hot weather you’ve been having lately. Hopefully you’ll cool back down to regular temperatures and get some extra rain ๐Ÿ™‚

    1. Oh, thank you so much Sandra! I can’t quite believe that she really did it, but she did! I’m constantly surprised by how much my kids can do…to me, they will always be tiny little babies that, so I have to remind myself that they are learning and growing ๐Ÿ™‚
