Menu Plan Monday

Happy Monday! Hope you’re having a nice long weekend! Even though it is a holiday weekend, I still prepped my menu plan for the week so that I’m not off track all week long.

Get a jump start on your week by making a menu plan!

This week, we’re doing a tiny bit of cheating on our Trim Healthy Mama plan so that we can have some chips with our favorite Buffalo Chicken Dip, which turns out to be an S, and we used the leftover chips to have a taco night. It is a holiday after all 😉

But being a former military family, we always remember the real reason for this holiday. We started the weekend with a trip to our local veterans cemetery with our scout pack to place flags at all the graves. Seeing the thousands of rows of headstones with the flags whipping in the breeze was powerfully moving.

Here’s what’s on the menu this week:

Breakfasts

Light Progresso Soup, 2 Wasa crackers with light cheese (E)
Turkey sandwich on Easy E Bread, orange (E)

Dinners
Trim Mac Salad (S)
Grilled Brats, coleslaw, homemade Tummy Spa ice cream (S)
Spaghetti with Italian sausage (hubby and I will have zucchini noodles), broccoli (S)
Meatloaf, mashed cauliflower, green beans (S)
Chicken Tacos (Crossover)
Chicken Enchilada Casserole, salad (S)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

  1. We went to our local veterans cemetery yesterday. We placed flowers at my both of grandpa’s, grandma’s, uncle’s, and my mom’s graves. It is really moving to see all those flags. There were so many people visiting, it takes a while to get to each one but it’s such a site to see all those flags big and little waving in the breeze.

    I hope you are your family have a wonderful Memorial Day and a great week too.
