Menu Plan Monday

Happy Monday! Hope you all had a nice weekend and are ready for a good start to the week. It was another soggy weekend here in Maryland…we spent a good deal of time watching movies (trying to catch up on my Star Wars) and reading. Hopefully my lack of activity will not prevent the scale from moving this week!

Get a jump start on your week by making a menu plan!

I was able to lose one pound last week following my Trim Healthy Mama plan. I’m still about 15 pounds away from my goal weight, and it seems like these last few pounds are coming off super slowly. But I do feel so much better overall when I eat this way, so that is a good motivator to keep going.

This week our family has a few activities that will take us out at dinner time, so I used some help from the grocery store and bought two rotisserie chickens to use in a couple recipes. With the protein already cooked and shredded, it will help me to get dinner on the table quickly.

Here’s what’s on the menu this week:

Breakfasts
Eggs, berries (S)

Lunches
Leftovers most days
Light Progresso Soup, 2 Wasa crackers with light cheese (E)
Turkey sandwich on Easy E Bread, orange (E)

Dinners
Trim Mac Salad (S)
Chicken Jalapeno Popper Soup (I’ll leave out the jalapeno so that it isn’t too spicy for the kids), quesadillas on low-carb tortillas (S)
Roasted Chicken Breasts, riced cauliflower, green beans (S)
Cowboy Grub and baked corn chips (E)
Homemade pizza using Gwen’s bread recipe, salad (Crossover)
Eat Out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

  1. I had planned an oven free menu for this week since the last few weeks have been warm but wouldn’t you know it the weather has turned.

    We had quite a bit of rain here this past week too. Which we really needed since it had been so dry. But we had planned to do our tile work in the bathroom on Saturday but it just down poured with thunder storms. So we waited until Sunday and only had a few sprinkles while working. We are hoping to finish the tile work this week and order our shower door too.

    It’s nice having the meat ready to go for dinners. It can make getting dinner done so much easier.

  2. Your meal plan looks good, Erin! You might be surprised about the jalapeño. One jalapeño in a whole pot of soup most likely won’t make the soup too spicy. When we’ve added just one jalapeño, it adds flavor to things like soup and chili without much heat at all. 🙂

    1. Thanks so much for the tip Sandra! I know my kids hate any hint of spicyness in their food, so I try to avoid any ingredients that might be a little spicy. But I’ll have to try just one jalapeno in the soup next time, because my husband and I like their flavor 🙂 (I think the original recipe calls for 6-8 peppers!)
